Ruby chocolate was born in Switzerland in 2017 and was an invention of Barry Callebaut. This is the newest type of chocolate after dark chocolate, milk chocolate, and white chocolate. More than 80 years younger than white chocolate, Ruby chocolate promises to bring many flavors and novelties to sweet lovers.
Cocoa beans have the original color of purple-pink. After the fermentation process, it turns into the characteristic brown color that we are familiar with. Ruby chocolate is processed by a special method with less fermentation time and other special techniques, resulting in a natural ink chocolate product with a fresh and fruity taste.
